According to Wikipedia, Encapsulated PostScript (EPS) is a DSC-conforming PostScript document with additional restrictions which is intended to be usable as a graphics file format. In other words, EPS files are more-or-less self-contained, reasonably predictable PostScript documents that describe an image or drawing and can be placed within another PostScript document.
There are a number of ways of opening these files. You can use insert option in Microsoft Word then navigate to the file to open it. You can also open it using other softwares such as Adobe Photoshop, Illustrator or CorelDraw. The advantage of being able to open an EPS file is that you can then export it to other formats such as PNG, JPG, GIF, etc.
